Chicchis Caponata Appetizer and Main Dish Recipes
Smoked Eggplant Bruschetta: Pour over Creamcheese. Serve with your favorite crackers for an easy and delicious appetizer.
Regular or Caponata with Artichoke: Grate 2 heaping tablespoons of Parmesan Cheese and 2 heaping tablespoons of Asiago Cheese. Stir one jar of either flavor of Caponata into cheese mixture. Mix well and serve with Fancy Crackers or Melba Rounds.
Using the same cheese mixture as above and again mixing with either flavor of Caponata add this mixture to a Bite Size Pastry. Top with additional cheese and pop into a 400 degree (hot) oven until hot and cheese starts to melt. A quick tasty hot hors d’oeuvre.
Any of the four Caponata flavors can be added to the top of Polenta, Eggs, Meats, Seafoods and Pastas.
Add any of the four flavors to a seasoned tomato sauce, (ground meat optional), and pour over a favorite Pasta for a scrumptious Spaghetti Sauce.
With any of the recipes above, the hard part is already done for you………Making the Caponata!
